Cordyceps Lovers Cheesecake


Treat your lover, friend or family with this Lovers' Cheesecake.

We've spiked it with the mushroom of love: Cordyceps.


Cordyceps has been used for thousands of years in Asia and research has shown it has the ability to boost testosterone in men and stimulate the production of female sex hormones, meaning better sexual health for all. It also improves athletic and bedroom performance as it boosts oxygen uptake and flow and increases ATP.


Don't worry if you are making it for a friend or your family, Cordyceps also has many other health benefits.


  • Because of its ability to boost oxygen uptake and flow, it is an incredible tonic for the respiratory system, helping with breathing issues like asthma and bronchitis.

  • It has anti-inflammatory properties that improve blood flow, heart health and modulate cholesterol levels.

Let's get into it:


Ingredients:


For the base:

- 192g of soaked dates

- 370g of oats


For the chocolate cheesecake:

- 168g of coconut palm nectar or sweetener

- 185g soaked cashews

- 400 ml of oat milk

- 160g of cacao powder

- 71g of coconut oil (melted)

- 1 pinch of salt

- 40g of frozen raspberries

For the top decoration swirl:

- 40g of soaked cashews

- 2 tbsp of coconut oil

- 3 tbsp of maple syrup

- 80ml of oat milk


Chocolate

- 60g of coconut oil

- 30g of maple syrup

- 60g of cacao powder


How to make it:

  1. For the base simply add the two ingredients into the food processor and blend until the mixture sticks together, then press the mixture into the base of a cake tin and compact it flat.

  2. For the filling add the ingredients to a high speed blender and blend until smooth.

  3. Pour the liquid into the cake tin, push the raspberries into the cake with a spoon so they can't be seen on the surface, set aside.

  4. Blend the ingredients for the swirl decoration in a high speed blender and then use a spoon to spoon out dots onto the cake top. Draw swirls on the surface, not going below the surface.

  5. Place cake into the freezer to set for 8 hours.

  6. For the chocolate, simply melt the coconut oil down and mix everything together.

  7. When the cake is set, you may need to run the sides of the cake tin carefully under some hot water to pop it out.

  8. Pour the chocolate onto the top and sides of the cake and place the raspberries where you like! It will take around 1-2 hours for the cake to defrost.
